Louis XV, Monaco

Believe it or not, being a fan of chef Alain Ducasse, Louis XV is the only reason that brought me to Monaco. I appreciate his respect for the ingredient’s original flavour, and also his ability to maintain a reasonably high standard for the many restaurants he runs around the world. Mirazur, Menton

Arriving by train at Menton Garavan in Southern France, the town reminded me of Santa Cruz in California – without the beach parties; or perhaps Shifen in Taiwan, without touristy tinge. Located just 20 minutes away from Monte Carlo, it’s a world apart. At the very least you won’t be seeing a flood of Rolls Royces, Lamborghinis and Porches on the streets. Cepage, Hong Kong

Wasabi sauce, Inaniwa udon, Amadai, Hokkaido sea urchin… It almost felt like a vacation in Japan. Blending French cuisine with a Japanese flair, Cepage offers something special in the Hong Kong fine dining scene. The chef’s cooking and style of plating exudes an association with his teacher Joel Robuchon. Certain dishes are even reminiscent of my wonderful experience at the Chateau Joel Robushon in Tokyo. Beige (ベージュ), Tokyo

‘I’m dining at Chanel’. Sounds extravagant? But that’s how many would identify with the two Michelin-starred restaurant ‘Beige’ in Tokyo, perched atop the Chanel building in glitzy Ginza.

Three years ago I visited their terrace Le Jardin de Tweed. Little did I know it’s Alain Ducasse – whom is also my favourite chef – operates the restaurant and rooftop bar. Continue reading

Joël Robuchon (ガストロノミー ジョエル・ロブション), Tokyo

Hello again. It has been crazily busy after spending time in Tokyo – clearing thousands of emails, updating my schedule for upcoming press events, getting ready for the WSET Advance Level, and etc… and finally, I could spare some time to work on my blog.

Lunch at Tokyo’s Le Chateau de Joël Robuchon was perhaps one of the highlights of the trip. It would rank as the top Robuchon experience that I have had in Asia. Continue reading
