Sushi Sase (鮨佐瀬) is headed by the former chef of Sapporo’s Sushi Zen. When it finally opened its doors in 2010, the media was all over it. Two years down the road, Sushi Sase remains one of the most reputable fine sushi shops in Hong Kong.
Their selection of sashimi was fresh and you can tell it’s prepared with care. Its tamagoyaki had the texture of a stiff Cantonese white sugar sponge cake (白糖糕).
I was deeply impressed by their Matcha milk pudding, which was absolutely charming. It comes with a fair bit of sweetness and the milk works perfectly well with the bitterness of the matcha topping.
Sushi Sase is definitely one of the great places in Hong Kong for sushi – going along the trends where a few great Japanese restaurants in Japan expand outwards with remarkable results. If shops like these maintains their standards well, one can look to experience even better Japanese cuisines in Hong Kong going forward.
