It was shockingly disappointing to discover the culinary standards that the Shinji by Kanesaka at the Raffles Hotel in Singapore could vary so much from how a Michelin 1 star sushi shop should like. The Sushi Kanesaka in Ginza has a one Michelin Star in the Tokyo 2013 Guide.
The disaster? The lack of freshness in the raw fish. Plus I wasn’t the only diner who complained. Chef Koichiro Oshino – the head chef of the branch – is serious and passionate about the art of sushi, but my experience shows this might not be the case for the staff under him.
Staff served food clumsily – the salmon roe spilled out from the sushi, and the sushi flipped to one side after being placed on the porcelain plate. Could the staff yet to be ready to handle 10 guests at the same time? Though the time is tight when one has to attend to so many people, a chef at such a position should show a positive attitude and passion to whom they are serving – a back-to-basics rule in the culinary universe.

Yes, a few times actually. But each time there was Kanesaka san himself behind the sushi bar, which I guess explains all..
