Guy Savoy, Singapore

I had limited time on my hands for my visit to Guy Savoy, and that’s why I ordered their Express, 90 Minute Experience menu (MENU “TGV”, S$150 per Person). Thankfully all dishes arrived within 90 minutes and I was grateful for that.

The entrance was majestic-looking, but within, the restaurant felt rather small and ordinary. Its signature dish, the crispy sea bass from Brittany, was nicely spiced and that brought out the flavour of the ish. It wasn’t my first time having this dish – my last experience was at the Joel Robuchon in Tokyo. The chef was surprised I’ve had a similar dish before. Not sure where the idea this dish originated from, but both restaurants handled it well, with the skin fried at a higher temperature to create its crispy texture.

Guy Savoy is a huge name worthy of its Michelin stars. Not only does his restaurant in Singapore serve outstanding delicacies, this restaurant goes pretty much in line with the Michelin standard in terms of its service. For this branch, it’s deserving of a two star rating.
