Sho Shingo (匠 進吾), Tokyo

Sushi Sho Shingo is another easily accessed Sushiya in Japan. Sho Shingo is a rather spacious sushiya conveniently located just few minutes walk from the Aoyamaichome station.

This was my first visit to Sho Shingo, but it’s also my first time experiencing Sushi from the Sho Family. Sho’s sushi are usually smaller in size, unlike the traditional Edo style sushi. Their choice of fish is also very different – for example, they will use salmon (which is never used in edo style sushiya). Sho Shingo plays with red and white vinegar in different pieces, it’s like mix a match of the flavour of the fish and vinegar.

This meal didn’t really impressed me, but there were absolutely no complains, especially with its price. I would consider a revisit.
